Quinoa Berry Breakfast Bowl (dairy-free)

Quinoa is a delicious versatile grain best enjoyed sprouted. The sprouting process decreases harmful phytic acid and increases nutrient content. If you aren’t familiar with sprouting, check out my post How to Sprout Quinoa.

Most of the time you see quinoa in savory salty recipes, which is also very delicious, but from time to time it’s nice to switch it up a little. Instead of the old standard oatmeal or cereal, quinoa can be a nice change of pace for breakfast.

Quinoa Berry Breakfast Bowl:

1 cup sprouted cooked quinoa (How to sprout quinoa)
1 tbsp coconut oil (where to buy coconut oil)
1-2 tbsp coconut sugar
Berries of your choice
Drizzle with full fat coconut milk (where to find BPA free coconut milk)

1. For instructions on how to make cooked sprouted quinoa, go to my post How to Sprout Quinoa.

2. Once quinoa is done cooking, but still warm add coconut oil. It will melt as you mix it around, then add coconut sugar.

3. Add berries of your choice. I used fresh organic blueberries and chopped strawberries.

4. Drizzle coconut milk over the berries. Enjoy!
